Difference between "you never know" and "one never knows"?

What is (if any) the difference between "you never know" and "one never knows"? Are they both acceptable English? Equivalent?

How about "Sometimes they say..." vs. "... we say…" vs. “… you say…”?

Thanks...

They both are acceptable and mean the same thing. The only difference is that 'one' is a little more formal.
