Difference between these singulars & plurals

Hi there,
I wonder what is the main difference between these singular and plural forms:

i) History & histories
ii) Mystery & mysteries

If they simply mean "one" or "many", where is the line to draw in order to make them countable? What should I consider as one "history" and one "mystery"?

I mean, for something that is tangible, it is easy, one apple, two apples, for these intangible ones like history or mystery, how to count?
