Difference between on and about 🤔

I'm becoming an confused Educator myself over the difference between "writing on" and "writing about"! Would you please remind me of the differences? Thanks so much!

Some examples of (American) usage:


I'm writing my PhD. thesis on Faulkner. ("About" cannot be used here.)


A: What are you writing?

B: I'm writing in my journal about the great time I had in Boston when I visited my aunt there. ("On" is possible here but a little formal-sounding by American standards.)
