Difference

What's the difference between " I don't think, I could eat that" and " I don't think, I can eat that" -

Kelly : What are you eating?

Jane : Oh, that's Prawn

Kelly : I don't think, I could eat that

Why can't we say " I can't eat that in the above sentence?
