Diet mentality

I want to make it clear that diet mentality is the only thing that causes people to struggle when they change what they eat and drink, it's not down to the food.

Does "diet mentality" probably mean what you feel while being on a diet?

It's not totally clear, but I take it to mean this. People think that what they eat (ie their diet) is normal. If they start to eat something different, it seems to them unnatural.

So probably it's all about your mental approach.

It's probably not what you eat being on a particular diet, but what you feel about this diet. I guess
