One dies from police torture.

Sometimes either will work, but often one sounds odd: 'die of' is more often used of a disease, while 'die from' applies to some other mishap.

Thanks M. Clive and MM

The context is: A group of police raid a village, detain one person and takes him to the police station where he is tortured. As a consequence of torture, the man dies. I mean it is a custodial death. I am trying to make a news headline for this incident.
