Are these sentences correct:
Why didn't you tell me this and went and told Sarah?
Why didn't you tell me this but went and told Sarah?

I am not sure your meaning. I am guessing a) you weren't told and b) Sarah was told but you did not like it? I would rewrite your sentences to the following: Why didn't you tell me this but instead told Sarah?

I would rewrite your sentences to the following:

Why didn't you tell me this but instead told Sarah? (that is one possibility)

If I were writing this, I'd use two sentences.

Why didn't you tell me this? Instead, you told Sarah without telling me!
