(C) I won't give up the dream to become a doctor.

(D) I won't give up my dream that I will become a doctor.
(E) I won't give up a dream that I will become a doctor.
(F) I won't give up the dream that I will become a doctor.

D and F are clumsy and not really native, either.

If you're trying to say that your dream is to become a doctor, then the above can potentially be misleading; e.g. "I won't give up my dream of one day owning a cake shop to become a doctor."

If that's the case, try,
I won't give up my dream of becoming a doctor.
