an the term 'desert' be used as an adjective?


Such as,


"The beach was desert."


If not, what would be the appropriate word for this?

Technically, yes. Actually, no, not any more. The term "desert island", meaning an island that has no people on it, is a relic of that use. You do still see it in high-register erudite stuff, but it is in no one's everyday working vocabulary.
