1) "When it comes to maths, my friend knows how to deploy the right tools to find the correct answer."
Is 'deploy' too formal or can it be used?
2) "I hate not knowing what questions the teacher will serve us."
I know that I could easily use 'will prepare for us' or something along the lines of that, but I wanted to add a hint of seriousness to it by using the word 'serve' because everyone's dreading the test. Does it sound good to your ear or should I avoid it?

Neither is natural. In #1, try "find" or "use" instead of "deploy". In #2, try "ask us" or (the informal) "hit us with" in stead of "serve us".
