demand & curving streets

Hello guys,

I have some difficulty in understanding the part underlined.

For the first question, what do you think is the best meaning of 'demand' -- some requirements or the number of people using the accommodation?

And for the second question,
what is curving streets and what does "centered on the ski resort" mean?
And ... the curving streets centered on the ski resort or Steamboat Village centered on ski resort?
It might not be a big deal for some but to me, it is.

Any comments about this would be appreciated.

No. 1:
Rates vary dramatically based on season and demand.
There are plenty of places to sleep in town, and rates vary depending on demand and season – it’s more expensive in winter.

No. 2:
Steamboat Springs’ two major areas are Old Town and, 5 miles south, the curving streets at Steamboat Village, centered on the ski resort. US 40 is called Lincoln Ave through town.
