delicacies

"the delicacies of the French palate"

When the "French" refers to French people, what does the phrase above mean? A French chef talked about the food preference of the French people and said that some people could not understand the delicacies of the French palate. I thought he meant the French people had a delicate palate that not everyone could understand or agree with, but according to dictionaries, “delicacy” used for that meaning is an uncountable noun. Can I interpret this “delicacies” as the quality of being delicate (in taste)? Or should I consider that he meant pleasing and appealing foods or dishes by the term and that he just intended to say some people don't know what dishes the French people enjoy?
