Definite article or no article

Direct learning strategies require the mental processing/mental processing of the target language.

Cognitive strategies can be described as the manipulation/manipulation of the target language by the learner.

Should I use the definite article or nothing? Would both be correct? Thank you.

Necrophagist definite article or nothing? I'd use nothing in the first one and "the" in the second. For me it's a matter of style, not grammar.
