Can we start a letter with Dear Prof. Jason, is it common to use that? I have seen Dear Dr. Jason mostly.
These forms of address are fine, but only if 'Jason' is his family name. Not if it is his first name, in which case just say 'Dear Jason'. You have to be sure your relationship is close enough to use first names, of course.
