In sending formal e-mails to collegues, what is the prular of Dear ?

There is no plural of Dear. When you are writing to one person: Dear Mr. Smith: --- formal Dear Aunt Linda, --- personal Dear Aunt Linda and Uncle Tom, --- personal, two people, still just dear I would argue that a formal business letter does not go to more than one recipient, unless it's a committee/board/etc.
