"day one", like similar expressions ("page 12", "chapter 10"), are already definite, just like proper nouns ("James", "Fred", "President Obama", "Mrs. Johnson"). That is, there is no question of which day one, which page 12, or which President Obama, because we already know there is only one of each.

Don't add "the" to any of these kinds of expressions.
