Can I say,

The hairdresser is cutting / trimming her hair in the barber's.

P/s: Do we say "barber's " , optical's mean 'shop' correctly?

Barber's is sometimes used to mean the barber's shop. It is similar to:
We went to Jim's for dinner. (Jim's = Jim's house / Jim's place)

Optical's is not used, because a barber is a person, and an optical is not.
