Cured and uncured bacon

After wading through the ever necessary search engine, the way I understand it is cured bacon is smoked (called streaky bacon in Britain) and uncured bacon is fresh. I was curious because I inadvertently picked up an uncured cut from the grocer, and I prefer the underside of my pig smoked.

Streaky bacon is a different cut from back bacon, with more fat in it; maybe somebody could scan a couple of rashers to show the difference. It can be either smoked or unsmoked. I'm not sure 'cured' and 'smoked' mean the same thing either.

Is 2% milk the same as skim milk, or is it the full-fat version?

In my experience the lower the fat level in the milk the sooner it goes off.
