Which one of these is right or better?

The audience ‘oos’ and ‘awes.’

or

The audience ‘oohs’ and ‘ahs.’

And does there have to be a apostrophe before the "S?" Also, it is two "O's" for the first sound, right?

Alright, thanks, but it's OK to put the 'oohs' and 'aahs' in single quotation marks for affect and stylistic reasons, right, since it technically is what the audience is saying?

I suppose you could, but I certainly wouldn't: They're verbs. You could rewrite the sentence so that quotation marks are necessary.

"Ooh! Aah!" the crowd exclaims.
