Is this the way Americans ask how many guests have come in for dinner?
How many covers are served every night?
How many covers do you serve at the restaurant?

As far as I know, a cover is a place at a table that is occupied by a customer. I'm not sure what the waiters' terminology is, but these sound appropriate.
