Countable VS Uncountable

Hello,
Sometimes, I feel puzzled about whether we should use plural forms or not. For example,
This kind of noodles contains potatoes(or potato).
On weekends or on weekend?
I feel that when we use the singual form,we intend to refer their abstract meaning.

We usually say two potatoes and many potatoes.I feel using potatoes is a little bit strange.

"Noodle" has to be singular because of "kind of". "This kind of noodle contains potatoes" is possible, too, and means the same thing, but "potato" is better because you don't mean you can find even one potato in there. Same goes for radish, banana, coconut, and watermelon, for example, but I'd say the plural becomes less likely as the foodstuff grows b
