Countable or uncountable in cooking instructions

Hi. In cooking instructions, what should we use? If both are correct, can you tell me one sentential situation in which one would be correct, whereas the other wouldn't?

You have to cut up the/some tomatoes/tomato and the/some onions/onion.

So, I think we can use the word to refer to its substance or individual fruits/vegetables as long as context allows (as it seems to a person) as your use of the words "the potato" as mentioned?
