Countable or Uncountable?

Which would you choose in the following sentence?

I don't know of a living soul who is able to read novels and poetry yet has no real-life experiences. Are you thinking of the fairy-tale princess who has been locked up in a tower, or Siddhartha Buddha as a young man?

Some people say that I should use the plural form and others say I should go for the singular form.
I am getting more and more confused.... Are there any grammatical rules to follow in deciding
which to choose? Or it all depends on how it's used in a sentence?

On a CV, "work experience" is usually non-count.

When you mean a significant episode, "experience" is a count noun.
He had many bad experiences when he lived in the crime-ridden inner city.
