Real Madrid could've been 6 goals up.

Does it mean that they could've scored 6 MORE goals or that the score in the end could've been 6-2 for Real Madrid?

Neither, I think. I would read it as the score could have been 6 goals greater for Real Madrid (e.g., 6–0 or 7–1 or 8–2, etc.)
