Could you tell me which vegetables do not add "s" at the end for the multiples

Can you tell me which vegetables and fruits that do not need "s" even they are in more than 1, multiples.

For example, A head of lettuce, head of cabbage, how about brocollis or also head of broccolli? What about califlowers? Squash, squashes? Spinachs?

Carrots, onions, potatoes, corns, bell peppers, I sort of understand but. Could you also tell me the reason for not putting s at the end.

I looked everywhere but could not find the answer. Thank you very much and hope to hear from you soon.

One head/two heads of lettuce, cabbage, brocolli, cauliflower. You can have two cabbages, but not two lettuces/brocollis/cauliflowers. (Well, maybe you can have two cauliflowers - I'm not sure.)

One squash, two squash (I think "es" is optional)

one onion/potato/bell pepper; two onions/potatos/bell peppers

one carrot, one bunch of carrots, two
