The flow-diagram illustrates the process of making smokes fish in small-scale production.

Overall, there are eight main stages of the process, beginning with preparation of the fish and ending with the delivery of final products.

In detail, the fish are first prepared by knives to remove the unwanted parts such as organs. Next, it is then put in salt water for 30 minutes before being cooked in a pot for 5 minutes. After that, the fish are remove and ready for the smoking stage.

In the beginning step of the smoking process, the fish are put on a grill inside a vat, below the grill is the burned materials whose purposes are to produce smoke. Wood is used to cover the vat, so that the smoke will not escape. After being smoked in 30 minutes, the fish are removed and the yellow coloring agents are added. Finally, the smoked fish are packaged in the containers which are put in a truck to deliver it to the customers.
