I see your point. I'd delete the two definite articles, [the] vet. med., and [the] rural vet.
I'm not sure if "veterinarian" is properly used as an adjective in modifying "work." I should think "veterinary work" (just as you have used "veterinary education"), OR "the rural veterinarian's work." (Note that "veterinary work" would not use the article.)
