I asked my friend if he was against women driving and he said:

You could drive all day and night and you wouldnt' hear a peep from me.

Is his sentence grammatically correct? Can I leave out the you in you wouldn't?

Yes and yes.

It's correct, and you can leave out 'you' there. I prefer it with 'you', however.
