Can I say,

(b) The herd / drove of cattles are grazing on the field.

Can I say,

These herd / drove of buffaloes are in the field.

cattle is already the plural, so cattles is incorrect.

So, do you mean all the senteces correct above? When shall I use "a doves of ..."? Why "cattles" use "is"? but not "are"?

Cattle is the plural of cows, not cattles.

The herd of cattle - one herd - therefore 'is'. If it just said 'Cattle' then it would be 'are'. The herd is.....the herd of cattle is.......the cattle are...
