Correcting our interlocutor

Hi,

This might sound silly but I'm not entirely sure it this is correct:

"The match doesn't start at 8 pm, only at 8:30."
"We're not leaving on Monday, only on Tuesday"

Is it correct to use "only" here? Should I use "but" or something else? What's the best way to say something like this?
