When you are wondering about this type of sentence, try taking "Joe" out and say it like this:

I can do it. Joe and I can do it.

Me can do it. Joe and me can do it.

Obviously, "me can do it" is not right, so you'll choose "I." This little trick is very helpful for the person learning English!
