It's correct grammar, but the meaning does not make sense.

say eg We thought our first trip was the most interesting one, but then our second was even more interesting.

And if you might wanna put more dramatic parts into it, you might say:

We always used to think of our first trip as the most interesting one in our life (or lives), not knowing that yet an even more interesting one was awaiting us.

or

Our first trip to ... always struck us as the most interesting one, but when the second one came up it all turned around, mainly due to it

This would work with 'a' instead of 'the'. Then 'most' is almost equivalent to 'very'.
