Correct sentences

I just saw your boyfriend kiss another guy!

I wish I were wrong or I wish I was wrong.

I wish I were taller or I wish I was taller.

Same rule that applies to If I were you I won't do that.

Saying I won't do that simply means I will not do that if I were you, so why can't won't be in the sentence?

No, because you are not and cannot be me; it is an impossible condition and therefore second conditional– If I were you I wouldn't do that. You must adhere to reality: If I am working tomorrow, I won't do that.
