Correct salutation

I have received an e-mail with a name but no gender. They address it dear sir or madam.

Should I respond Dear John Smith?

At the end, do I put yours sincerely or Regards?

Yes, if you have their name use it, therefore "Dear Mr (John) Smith is the best way to reply. " Yours Truly is also a good formal sign off if you can't remember which to use. I used to remember it that if you use a S for Sir then you couldn't use the S and the end for Sincerely and vise-versa.
