I'm sorry I haven't replied to your email earlier but I didn't want to respond with one or two short sentences. It (or that?) wouldn't do your email any justice.

I'm sorry I haven't replied to your email, but I didn't want to respond with only one or two short sentences. That wouldn't do your email justice.

I have a follow-up question and I hope I can ask you for helping me out again. I'm pondering over two possibilities here:

1) Like I said on the phone, replying with one or two sentences wouldn't have done your email justice.
2) Like I said on the phone, replying with one or two sentences wouldn't do your email justice.

I really don't see any difference in intent. The speaker has merely changed his mental viewpoint of his own 1-2 sentences (which never existed anyway!) from then to now
