I suppose that makes sense since they have the same meaning-- only one is used for countable nouns and the other for non-count.

I'm trying to think of a sentence with 'much' used as an adjective without 'so' preceding it...I can't. Can you?

Not without sounding "bookish." We would casually say, "a lot of."

We encountered much trouble with immigration along the way.
We encountered many problems etc.

"A lot of" works in both cases.
