Coordinating Conjunctions Please Help

Are these sentences punctuated properly?

" I haven't been able to spend a lot of time working on the project, but I really just wanted to let you know that I am still working and I am still trying to finish up what I can do before asking my friend for help."

Could I do something like this:

"If he does not remember, and she does not know, then I do not want to go. "

Or, is this prefered: "If he does not remember and she does not know, then I do not want to go."

Does it matter if the structure is not as parallel?

Ex. "If he does not remember lounging out, and she sleeps without eating dinner, I do not want to go to the restaurant."

OP here, I just thought I would try to clarify. " - note is the lack of comma okay? Could I do something like this: "If he does not remember , and she does not know , then I do not want to go.
