Coordinating conjunction and commas.

I know that you are supposed to put a comma before a coordinating conjunction that is placed in between two ICs. But what if I have 3 clauses or two clauses and a phrase?

e.g.
2 ICs:

"Designing sounds pretty cool, but I don't know anything about it."

3 ICs:

"Designing sounds pretty cool, not that I know anything about it, but I'd imagine that it's got something to do with models".

2 ICs+phrase:

"Designing sounds pretty cool, never tried it, but I'd imagine that it's got something to do with models".

It’s parenthetical, so it must be set off by commas.
