Can you say 'continue on' (as in 'sb will continue on to do/with sth')? I've heard people say it, but it sounds incorrect to me. Shouldn't you say either 'continue' or 'go on'?

I think it depends on context, like everything of course.
If I were giving directions I might well say, "turn left at the lights, continue on down the road until you pass a petrol station, then take the next right."
You would only need to say "continue down the road" to say "continue on down the road" is a tautology, the use of the word "on" is superfluous and unnecessary.
The only correct use of it would be if you said, "I wish to continue on my way."
