Consciences

Hi,

(1) conscience is a count noun (according to my longman).

Following is a short excerpt from a British textbook.

I like Americans. Americans have consciences. [1]

What if change from the plural to the single here? ->... Americans have conscience [2]

Is [2] correct grammar?
Are [1] and [2] fully equivalent?

(2) Bachelors have consciences, married men have wives (by Samuel Johnson)

This humor is too subtle for me.... If you could explain the meaning?
