Connotation why cant i use "bland" instead of vivid?

I could see vivid colour of sea and sky.

Well, sea and sky have more than one colour, so I would use the plural. Also, the definite article since it is a specific set of colours.

I could see the vivid colours of sea and sky.

"Bland" is most commonly used for the sense of taste. The opposite is spicy.
Hospitals serve bland food.
