Confusion about names

are italian or french names the same as english names? first name.middle.name.last name?

If i know someone's full name, but i dont know it is a she or he, and he/she contacts me firstly, then what should i call him/her, to be more polite?

I agree. That's the best thing to do, although it may leave some room for misunderstanding.
For instance, Andrea is a name for boys in Italy, and for girls in English speaking countries.
