We talked about my interest in internship at ... EDIT OK if you talked in general terms about the subject of internship and your interest in it.

We talked about my interest in an internship at ..OK, if there were several possible internships and you spoke about one or them.

All three are grammatically possible.  If only one is available or has been discussed, then 'the' is appropriate. In other contexts, the other two could be.
