Confused of using "some" or "many"

I have some apples, but I don't have any mangoes.

My question is "is the word "some" in that sentence interchangeable with "many"? So the new sentence will be like this " I have many apples, but i don' t have any mangoes".

If by 'interchangeable' you mean that the sentence remains grammatical, then the answer is yes. Both I have some apples and I have many apples are grammatical.
If by 'interchangeable' you mean that the meaning remains the same, then the answer is no. Many is more than some.

Since the connecting word is "BUT" and I don't want to change the meaning of the second sentence, which one is more suitable to become the first sentence if later connected with the second sentence?

I have some apples but i don't have any mangoes.

The sentence isn’t making a comparison. Both sentences are fine as long as you keep the comma and capital I.

What's the difference between

a) I have apples.

b) I have some apples.

The difference is:

I have apples: This means you that own apples but we don't know how many. There is no indication of how many apples you own.

I have some apples: This means that you have a small amount of apples. Although "some" does not really tell us how many apples you have, it indicates a generally small number.
