I'd say it would be much more typical to simply use the adjective in your second sentence:

He's very self-confident.

Just to make sure that nobody gets the wrong idea:

A search at the New York Times gets 1086 hits for just the word self-confident.
And searching for self-confidence results in 3,236 hits.
