Sorry for the delay; I didn't realize you'd posted.

Vital organs - yes, these would be organs necessary for continued vitality, or life. The appendix, thyroid gland, etc. are not vital organs.

At hand - in this context "current" works, but it carries the meaning of close physical proximity. "The task we've got right here in front of us."
