We all really enjoy ourselves when playing basketball. We compose a team and compete with other teams.

I think "compose"is ok ,usually I would use make up team."compose" sounds a little formal.

Compose can mean to make up or form the basis of, so you did not misuse the word. Still, form a team or make up a team sound much better. You could also say We are a team.
