Complete sentence/using deepest with appreciation /apology vs apologies/using the word note

Why questions are in regards to the following sentences:

Sincere apologies for the lateness of this note. I know this is a very belated note, but I wanted to make sure I wrote to you to show my deepest appreciation for your Christmas gift.

Even though, I expressed my gratitude by giving you a warm and loving "Thank You" hug, it has been bothering me that I did not also give you a thank you card.

Questions: 1. Is it okay to use apologies instead of apology? Is that a complete sentence?

2. Does it make sense/is it correct to use the word deepest in front of appreciation?

3. Is it correct to use the word "note" (to refer to this thank you card). I used that word instead of

over using thank you card since I used thank you card in the second sentence.
