Are they all possible?

Yesterday, I baked bread from scratch.

1) I enjoyed it much more than I had expected.

2) I found it a lot more fun than I had thought it would be.

3) It was far more enjoyable than I had expected.

Yes, and note that you can omit "had" from all of them, which is most likely how they would be said in everyday conversation.
