Hawker Promoter Promoting, Professionalizing and Branding Street Foods.
Besides providing a source of affordable food for the community, hawkers have become part of the social landscape, being community spaces where residents from all walks of life freely interact. They are a unique feature of Hyderabad’s urban landscape and help engender a sense of belonging to Hyderabad. They also play an important role as a ‘crucible’ and repository of our diverse food heritage
The Hawkerprenuer
The design of the new hawker is based on the principles of environmental sustainability, cost effectiveness, and low life-cycle costs. These principles emphasize design considerations that are sensitive to our climate, and the adoption of energy and water efficient practices and features.
Each Hawker shall have an innovative design (i.e. a different from each other derived through design proposals from different architects / engineers) that is an improvement over existing tools and relates appropriately to the individuals physical and social context. The new vending machines / tools shall be architecturally decorous and delightful.
Hawkers play an important role as gathering places for the community, and can also showcase Hyderabad’s food culture through organized events such as food trails for both tourists and locals.
As a common space where social norms are formed and reinforced, hawker stalls can be a platform to develop and nurture social graciousness among patrons and the Hawkerprenuers.
Objectives / Goals
1. To suggest ideas on infrastructure and design that will enhance cleanliness, hygiene and resource efficiency of hawker.
2. To suggest ideas that will enhance the vibrancy of the hawker.
3. Drawing income from advertising and event space – to increase vibrancy and using the funds that are generated to benefit the Hawkerprenuer.
4. Encouraging Energy Efficiency through food waste recycling and reducing energy consumption. – Green Innovations
Hawker Promoter shall serve as an institution for promoting, teaching and transferring of skills to a new generation of hawkers “the Hawkerprenuer” Skills that are necessary for the management of the hawker stalls as a small business.
Green Innovations
Energy efficiency may be attained with the use of renewable energy.
Solar Powered Stalls
Hawker stalls can be fitted with solar based LED lightings for the common areas and stalls, this would be achieved by installing solar panels at the roof tops of new stalls.
Advantages
1. Solar panel will produce electricity to charge the battery, by which a small fan and LED lights would work, suitable selection of panels would also charge upto five mobile phones at a time, this could be an incentive by providing free mobile charging to customers thus increasing income.
2. If the charge remains the Hawkerprenuer can use it as an inverter in their house which will save current bills, saving income, which will increase the GDP rate of the Hawkerprenuer.
4. If crores of vendors use this, it will directly save the fossil fuels and electricity consumption.
5. The Software provides subsidy on solar panels, it will be affordable for them to purchase it.
(I asked around - Sugarcane vendors, that they will save up to 2000/- per month if they use this. A ice-cream vendor said he will save upto 1000/- on his electricity bills, Pan Stalls said he would save upto 1000/-)
6. Solar power would increase the working hours of the Hawkerprenuers stall, which will increase their income too.
See Solar Catalogue.
Waste Recycling –
Composting
Other green innovations could include the incorporation of, composting stations such as the excel industries – bioneer waste composter and sell the compost back to the farms,

Briquetting
Another green innovation would be to briquette the waste into charcoal.
See attachment on briquetting technology
Incentives
The Software could consider providing incentives for Hawkerprenuers who intend to adopt green initiatives for their business. For example, incentives to help Hawkerprenuers switch from the use of plastics to more sustainable packaging options like paper based take-away boxes, and for the purchase of energy-saving appliances.
The Software could also provide incentives to Hawkerprenuers who choose to recycle their waste. Recycling bins could be provided at individual stalls and at the centralized rubbish collection points.
Besides giving incentives to promote green practices, the Software could encourage Hawkerprenuers to make explicit the costs of non-biodegradable items such as straws, disposable cutlery, plastic containers, and charge patrons for their use. On the part of the Hawkerprenuer, they should be encouraged to reduce the use of plain food containers and plastic bottles. Hawkerprenuers could offer food rebates or omit their current practice of charging extra for their take-away plastic containers to consumers who bring their own tiffin carriers/food containers. Drink stalls could offer personal water bottles refills for a low price.
In view of their important social and cultural functions, there is a need to ensure hawkers continuity, growth, and long-term viability. Going forward, they need to remain vibrant pulsating with energy and activity.
These goals can be reached through the combination “Hardware” (facilities and design) and “Software” (policies and practices), together which would form the
“Heartware”
The “Software” portion of the equation refers to the following key ingredients: a. Stakeholder ownership – There must be pride of ownership by the stakeholders, including stall owners, cleaners, and the management. b. Political will – This must be available to promote and if necessary, enforce social graciousness. c. Managerial will – The management must help to incentivize and make avail resources to promote social graciousness. d. Staff selection – The staff selected must be the right fit for the job and given reasonable pay benefits. e. Staff development – This is necessary to make them more proficient and help promote pride in their work. According to this vision, the combination of “hardware” and “software” will create “heartware” which is a socially gracious Hyderabad.
“Hardware” is defined as the physical, infrastructure-related part of the hawkers vending tools, including a. Cart / table decals, b. Posters, c. The physical structure and elements of the hawkers stalls d. Impart Basic Financial Skills – especially to women Hawkerprenuers with assistance from usiness school for rural women
e. Impart Environmental Sustainability skills – Green Innovations.
These physical parts could be designed to promote social graciousness. For example, posters may be put up and table decals printed to remind customers to responsibly dispose of waste in designated rubbish bins. The architects / engineers could design conveniently located recycling stations so customers do not have to go out of their way to look for these stations.
It should be noted that enhanced social graciousness can also result in lower operating costs which in turn helps to keep prices at Hawkerprenuer stalls more affordable.
Included as part of the “hardware” is the support staff - Support staffs are the cleaners whose job is to meet and greet customers, and advise the public to clear the rubbish themselves. These cleaners would clean only in the central area. They should be given uniforms and higher salaries to instill in them a sense of pride in their work, and to promote greater respect from the public.
Community pressure can form yet another part of the “hardware”. This could take the form of “hard” community pressure (e.g. fines levied on customers who do not ) and “soft” community pressure (e.g. nominations and awards for social graciousness, character-building programs and activities for school-going children to serve as volunteer greeters and guides on weekend so as to learn and share the simple graces of daily living.).
According to this vision, the combination of “hardware” and “software” will create
“heartware”
which is a socially gracious
